Christmas Pudding Ice Cream Recipe
Last week found me hanging out with Galton Blackiston, and some of my co-writers from Great British Chefs – several of us were invited to cook along with Galton for a special Google Hangout session, and the recipe we were making was Christmas Pudding Ice Cream. Galton’s recipe was very easy to make, and you don’t need an ice cream maker to make it either, although I am lucky enough to have one which I used for mine. I had made a Christmas pudding on Stir Up Sunday, as luck would have it, so I my pudding was already made, cooked and ready to use – you can see my pudding recipe here: Stir Up Sunday: Quick and Easy Microwave Mincemeat Christmas Pudding Recipe.
We were all told to have our ingredients weighed and measured before the hang out kicked of at 6pm; laptop charged and ingredients prepped, I waited to join the hang out armed with a print out of Galton’s recipe and a wooden spoon for stirring! The basis for Galton’s recipe is a simple vanilla custard, to which crumbled Christmas pudding is added. As I have my own chickens, the 6 egg yolks needed for the recipe was no problem, and I also had some lovely Ndali vanilla pods to add too. The recipe is a perfect way to use up any leftover pudding, and I am sure that non-pudding fans would also enjoy this ice cream.

I served this lovely ice cream on Saturday night to rave reviews and even the “Christmas Pudding Hater” liked it and had seconds. I did add an extra vanilla pod to mine, as we love a strong vanilla presence, and the citrus notes of my home-made pudding really came through and added to the flavours too. Do try this ice cream out over the festive period, as Galton says: “it’s a glorious way to make the most of leftover Christmas pudding, Galton Blackiston’s ice cream can be served on its own or as one part of a more substantial festive dessert”. There is no need to have an ice cream maker, and you can also add Christmas cake, mince pies and other fruity bakes.

oh yes please!… love the idea of christmas pudding ice cream… we could eat it with my christmas pudding brownies and have a christmas pudding fest… gorgeous and fab post, that must have been a great day x

Love the Christmas pudding ice cream, have you tried frying slices of cold Christmas pudding in butter and serving with very cold cream or brandy butter? So delicious!

Thanks Anna, yes I have tried that, I love fried Christmas pudding and my grandmother used to serve it with something called “destiny sauce”, a sort of creamy boozy white sauce, I have her recipe and will share it here one day!
