Bacon and Banana Pancake Strips with Smoked Chilli Honey

My mum is a dab hand at making pancakes and we don’t have to wait until pancake day (Shrove Tuesday) to enjoy them, as she often makes them for breakfast throughout the year……thin, lacy ones as well as fat Scotch pancake style ones too; and, although I love the fat little Scotch pancakes, as well as large American style pancakes, it’s the thin, lacy crepe style pancakes that I truly love – doused in sugar and freshly squeezed lemon juice, they are utterly sublime. ………much though I love these pancakes, I wanted to get creative in the pancake kitchen this year, and with a little bit of help from Asda “mix-o-meter” Pancake Recipe and Fun Facts page, I decide to make some sweet and savoury pancake dippers! I saw something very similar on Pinterest recently, an American recipe idea, and I thought how brilliant it was to have long strips of pancakes with bacon hidden in the middle of the batter – but, I wanted to make my own version of the idea, with British style bacon AND bananas, so there would be sweet and savoury elements, as well as a vegetarian option. I also wanted to serve my pancake dippers (strips) with some fabulous smoked chilli honey I won from Gran Luchito last year – I have tried the honey with all sorts of ingredients such as cheese and bread sticks, but I had an idea it would be amazing with this pancake recipe.
I served these pancake dipper strips with the honey as planned and it was a totally amazing flavour experience! The smoky chilli honey enhanced the rich bacon and sweet banana pancakes, and my husband, who is not a big chilli fan normally, asked for more! The pancakes were incredibly tasty and the combination of banana and bacon reminded me of that classic American dish of Chicken Maryland, where bacon and fried bananas are served alongside sweetcorn fritter and fried chicken. These pancake strips were very easy to make and serve, and all I had to do (once all of the pancakes were made), was to pile them on a serving platter with the jar of smoked chilli honey in the middle of the table, so everyone could help themselves – simples!
If you are a bit stuck for ideas this Shrove Tuesday, then I urge you to try these pancakes – they are delicious and if you are serving them to members of the family who are not chilli lovers, then serve them with normal honey or maple syrup for a fabulous pancake day breakfast or family tea. Ingredients
- butter to grease
- 225g plain flour
- pinch salt
- 2 eggs
- 450mls milk (or a little more if it is too thick)
- 10 rashers of streaky bacon (5 rashers of back bacon, cut in half lengthways)
- 2 bananas, cut lengthways into 4 or 5 slices
- Chilli honey to serve (I used Gran Luchito)
Note
Such an inventive idea for bacon and/or banana pancakes, something a little bit different for breakfast, brunch or even pancake day (Shrove Tuesday). These pancake strips are delectable when "dipped" in or spread with chilli honey, although you can serve them with normal honey and maple syrup too. If you don't have any streaky bacon, just cut back bacon in half lengthways.
Directions
Step 1 | First make the pancake batter. Put the flour and salt into a bowl, mix and make a well in the middle of the flour. Add the beaten eggs and start to mix with a wooden spoon, adding the milk gradually until you have a smooth batter. Beat well and set to one side until you are ready to cook the pancakes. |
Step 2 | Heat a griddle or a large heavy based frying pan and grease with a little butter. Pre-heat oven to 100C/200F. |
Step 3 | Fry the bacon first, until one side is crispy or to your liking - turn the bacon rasher over and pour pancake batter over the bacon in a long strip - it doesn't matter if it runs, you just get more pancake! |
Step 4 | Cook until bubbles appear on the pancake surface, then turn the pancake over to cook the pancake on the other side. Take bacon pancakes out of the griddle or frying pan and keep warm in preheated oven whilst you cook the rest of the pancakes. |
Step 5 | Fry the bananas after all the bacon has been cooked, unless you are cooking for vegetarians, in which case cook them first or in another griddle/pan. Turn them over once they are brown and pour the pancake batter over them and cook as before for the bacon pancakes. Keep them warm in the oven if necessary. |
Step 6 | When you are ready to serve the pancake strips, arrange them on a platter and serve with chilli honey, or, plain honey and maple syrup. |

Wow, that does look great! I never thought I would see banana and bacon together but I think I would devour that dish. I never tried chilli honey either so this recipe brings a lot of new ideas to me..
