Tea Time Treats for the Easter Tea Table
~ Little Easter Egg & Daisy Cakes ~
with Chocolate Cheese Cake Frosting
I have made a discovery, and a brilliant one at that…….I have discovered Philadelphia with Cadbury – a chocolate cream cheese which is JUST like eating chocolate cheesecake! I have also discovered Dr Oetker’s amazing edible Wafer Daisies……as well as their wonderful Hundreds & Thousands too, and a HUGE thanks to Dr Oetker for sending me some lovely decorating goodies to use and review for Easter baking; this is the first of many recipes that I will be baking that uses some of the products I was sent. And, what a great day I had baking and decorating yesterday – I wanted to create some little cakes for the Easter tea time table, and decided on a basic vanilla Victoria sandwich cake mixture with a chocolate cream cheese (cheese cake) frosting. I then had an idea of making a little nest with some chocolate flake bars, before adding some mini chocolate eggs with a pretty wafer daisy to complete the Easter cake picture…………..and the hundreds and thousand of course.
So, what we have here is a simple and yet VERY pretty Easter bake, and a perfect entry for Tea Time Treats for April, which is being hosted by my lovely partner in crime Kate this month – our theme this month is Easter and Spring treats and the challenge can be found here if you would like to join in: April Tea Time Treats and all the rules are here: How to enter Tea Time Treats. I love the wafer daisies, they are quite robust and you get twelve in a packet with four of each colour, yellow, white and pink – perfect for cake dressing up! I used silicon cake cases this time, I am not usually a fan but these ones are nice pastel colours and also a good size – bigger than a fairy cake but smaller than an American muffin cake case.

Ingredients
- 150g self raising flour
- Dr Oetker edible Wafer daisies (1 packet of 12)
- 36 Cadbury's Mini Eggs
- 2 Cadbury's Flakes
- 160g packet of Cadbury's Chocolate Philadelphia Cream Cheese
- 2 to 4 tablespoons milk
- 2 teaspoons vanilla extract
- 3 eggs
- 150g softened butter, unsalted
- 150g caster sugar
- Dr Oetker Hundreds and Thousands (Pastel shades)
Note
Delightful little vanilla Fairy cakes (cup cakes) that have a chocolate cream cheese topping with assorted edible decorations, perfect for the Easter Tea Time Table.
Directions
Step 1 | Pre-heat oven to 180C/375F/Gas Mark 6. |
Step 2 | Put the flour, sugar, butter, eggs, vanilla extract into a mixing bowl and using a hand whisk, whisk for 3 to 5 minutes until light and fluffy. Add the milk until you have a soft batter. |
Step 3 | Spoon the cake batter into pre-greased paper cake cases, or silicon cake cases - fill to three-quarters full; I used small muffin cases. Put the filled cake cases into a patty or muffin tin so they hold their shape during baking. |
Step 4 | Bake for 10 to 15 minutes, depending on your oven, or until the cakes have risen, are firm to the touch and are golden brown. Allow the cakes to cool in the tin for 5 minutes before taking them out and allowing to cool completely on a wire rack. |
Step 5 | When the cakes are completely cold. decorate them. Spread some of the chocolate cream cheese over each cake, and then arrange some crumbled flake on top to resemble a nest; then place three mini eggs on top, "gluing" them with extra chocolate cream cheese if necessary before sprinkling the hundreds and thousands over the top and adding the wafer daisy. |
Step 6 | Arrange them on a plate or cake stand and serve as part of the Easter Tea. |
I have just found out that the We Should Cocoa challenge for April is Chocolate AND Cheese…….and with that in mind, and because I used CREAM CHEESE with CHOCOLATE as the frosting for these cakes, as well as chocolate flakes and mini chocolate eggs, I am entering them into the We Should Cocoa challenge for April, which is being hosted by Choclette this month over at Chocolate Log Blog.

Karen, your a life saver! These are perfect, we have some French guests coming for dinner tonight and rather the the (all to obvious) tarte au pomme, I thought I’d make little cupcakes. I saw some Philly with milka for the first time here in Brittany, so I’m going to bake these along with some mini carrot cakes (I’ll take the rest to the Easter egg hunt tomorrow, which is being hosted by some neighbours this year.) a huge thank you for inspiring me once again, and Happy Easter from Brittany. I am NOT NOT NOT trying any chocolate cheese (though I did notice that there were little snack size portions). I’m guessing it’s a bit like chocolate ganache…and I have quite enough problems avoiding eating that;)

I didn’t like Cadbury/Philly combination at all. I wasn’t prejudiced to start with, but once tried, realised that I really-really don’t like it. I made a cream for the chocolate cake with it, by mixing other ingredients to make it more edible. 🙂
