Buffalo Cauliflower Bites
Today is “Reveal Day” for Group D and the Secret Recipe Club: the Secret Recipe Club is a way to not only find but share new blogs. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe (or more) to make, photograph, and then will draft up a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose. It’s such a fun experience and it’s a great way to get new followers, too. There are always new blogs to discover and our club has plenty to offer.
The blog I was assigned for April was the wonderful and engaging Fantastical Sharing of Recipes; written by Sarah, I have visited her blog many times for recipe inspiration and so, I was delighted to be able to take more time and browse her recipes for April’s Secret Recipe Club. Fantastical Sharing is a food blog, Sarah and her family rarely eat out and she tries her hardest to refrain from using “out of box” meals. You may not find the healthiest food there, Sarah says, but she likes to share what her family eats and enjoys. Her main purpose for starting the blog was to share recipes with friends and family, and she is now cooking her way through all the recipes that she’s hoarded over the years in order to share them with all with her readers.
As I searched through Sarah’s recipes, looking for a recipe to make, there were several that caught my eye: Buffalo Chicken Chili, Crockpot Chicken Fajitas, Twix Caramel Brownies, Dulce de Leche Cheesecake Bars, Blueberry Breakfast Braid and Asparagus Gruyere Tart, But, it was her recipe for Buffalo Cauliflower that I decided to make in the end, as regular readers will know, I have an addiction for this humble and often overlooked vegetable – you will find all my cauliflower recipes here: Cauliflower Recipes on Lavender and Lovage. I loved Buffalo Wings, an American speciality where chicken wings are deep-fried in vinegar-based, cayenne pepper hot sauce with butter. So, I was fascinated to try a veggie version using cauliflower.
To cut back on calories, I omitted the butter and as I cannot source Frank’s red-hot Sauce here, I used Piri-Piri sauce instead. I also added garlic granules in place of garlic powder, but other than that, the recipe was as Sarah (and Kudos Kitchen from Renee) had originally posted it. The recipe was amazing – crisp and hotly spiced little cauliflower bites which were just perfect when served with cheeseburgers and a cheeky beer! It’s another imaginative way to cook cauliflower and I plan to make them again as an appetiser when friends comes over. Ingredients
- 1 large head cauliflower, cut into florets
- 200g plain flour
- 50g cornflour
- 1 tsp baking powder
- 1 tsp garlic granules
- 1/2 tsp salt
- 1/2 tsp black pepper
- 300 mls beer
- 4 tbsp thick hot sauce, such as PiriPiri sauce
Note
A spicy coated cauliflower dish that is baked - this makes the perfect accompaniment for any barbecued food such as burgers, sausages or grilled chicken. Can also be served as an appetiser with assorted dips.
Directions
Step 1 | In a medium bowl, mix together flour, cornflour, baking powder, garlic granules, salt, and pepper. Then add the beer and hot sauce to the mixture and stir until as smooth as possible |
Step 2 | Add cauliflower in batches to batter. Using a slotted spoon, coat florets and remove, letting excess batter drip off, placing them on baking paper lined baking tray. Repeat until you run out of cauliflower or batter. |
Step 3 | Dribble a little hot sauce over the cauliflower and bake in a pre-heated oven 220C/450F/gas 7 for 15 to 20 minutes. |
Step 4 | Serve straight away as an accompaniment with a creamy dipping sauce. |

I live in the birthplace of the chicken wing and while I like them from time to time, it’s nice to have a healthier alternative to munch on. These cauliflower bites sound delicious, even without the Franks! Great pick this month 🙂
