My slightly adapted recipe from the Schwartz Spice Club recipe sheet; these sticky pulled chicken sliders make a wonderful summertime tea or supper dish, and are extremely easy to bake and make. In the absence of any Schwartz Grill Mates Sticky BBQ Glaze, you can use your favourite BBQ sauce instead. Use chicken quarters in place of chicken thighs, so you get the drumsticks as well as the sticky pulled chicken!
Ingredients
- 4 chicken quarters or 6 chicken thighs
- 1 x sachet of Schwartz Grill Mates Sticky BBQ Glaze (or BBQ sauce of your choice, about 4 tablespoons)
- 50mls water
- 6 small ciabatta bread rolls (or small bread rolls of your choice)
- baby gem lettuce leaves

Directions
Step 1 | Bake the chicken pieces in a pre-heated oven at 200C/400F/gas mark 6 for 35 to 45 minutes, until they are cooked and the skin is very crisp. Alternatively you can cook them on the barbecue for about 25 minutes. |
Step 2 | Remove the chicken and allow to cool slightly; if using chicken quarters, cut the drumsticks from the thighs and then with two forks, shred the chicken thigh meat. (Serve the chicken drumsticks separately) |
Step 3 | Heat the BBQ glaze in a small saucepan with the water for 3 to 4 minutes until bubbling hot and then pour it over the shredded chicken meat - mix well until all the chicken is coated. If there is any sauce left, use it to glaze the chicken drumsticks. |
Step 4 | Split the bread rolls in half, add baby gem lettuce leaves and then pile in the Sticky Pulled Chicken meat, to make sliders. |
Step 5 | Serve immediately with extra salad, chips or potato crisps. |
