A BIG Easter Cake!
Creme Egg Chocolate Drizzle Cake
It’s JUST a week away until Easter Sunday, the day when Easter bunny hops around with his basket full of eggs, and egg hunts abound in most people’s gardens, weather permitting of course. It’s a four-day festival, starting with Good Friday and ending on Easter Monday, and there are lots of amazing recipes associated with this wonderful spring feast such as: Hot Cross Buns; Pace Eggs; Roast Lamb and Cakes of all shapes and sizes. As well as all of the traditional fare, I also like to serve treats for breakfast and tea, such as Easter Eggy Bread: Raspberry & Vanilla “Pain Perdu” (French Toast) and some pretty little pots of creme egg desserts with chocolate spoons and chocolate bunnies!
Although spices buns and fresh seasonal lamb and vegetables feature on the Easter menu, it has to be chocolate that steals the show, and although I am more of a savoury person, I DO love a nice piece of chocolate cake or an Easter egg as well as a creamy chocolate dessert. Every year, I always try to create a spectacular cake for Easter, it doesn’t have to have to be chocolate, but it’s nice to indulge in an excess of cocoa by way of a treat; and this year I think I have created my most indulgent cake yet, a towering chocolate mansion filled with chocolate cream cheese, topped with more of the same and then decorated with a white chocolate drizzle, mini chocolate buttons before being adorned with some Cadbury’s creme eggs…..and it’s mega!

I love this cake (surprised I didn’t comment when I first saw it) and as soon as I saw it I decided it would be an easter-cum-birthday cake because it looked so spectacular and yet not too hard to put together. I found the white chocolate wouldn’t drizzle so well and I couldn’t find the chocolate cream cheese spread in the supermarket on the day I wanted to buy it (though they do stock it sometimes) but these were minor hiccups and it looked impressive and tasted decadent. Have posted my version on my blog though I wish I could photograph cakes like you – your photos are just lovely.
