Pink Grapefruit and Prawn Salad
(The 5:2 Diet and Weight Watchers)
Here I am again with my regular Fish on Friday post, but it’s a day early and is on Thursday! And this week I am featuring one of my favourite salads – a healthy and flavour packed recipe with fruit, seafood, salad leaves and a spicy dip, as well as cooling fresh mint, Pink Grapefruit and Prawn Salad, which is also suitable for those following the 5:2 and Weight Watchers diets. Not only is this salad healthy and low in calories, but it’s also as pretty as picture too…..and it makes a great starter for a summer dinner party, and, I have served the prawns served in a lettuce leaf wrap before, as an appetiser. My prawns were LOVELY Scottish prawns, I bought them cooked, but not peeled, so then I just had to peel them before serving, they were amazingly fresh and full of the flavour of the sea! And, I always think that seafood and shellfish go so well with ALL citrus fruits, but especially pink grapefruit.
This salad has only 90 calories per portion, which makes it an ideal meal for any dieters, and especially for those struggling to follow the 500 or 600 calories on the 5:2 fasting days diet; it also makes a pleasant change from the usual diet fare, such as crisp breads cottage cheese and “cuppa” soups, although there is nothing wrong with any of those in moderation of course! If you have more calories to burn, by all means add some salad dressing to the salad, in place of the low-fat mayonnaise dip or as well as the dip – this will add on about 6 calories for a fat-free version, such as Kraft Italian vinaigrette with garlic or 61 calories for a creamy one such as Sainsbury’s blue cheese dressing. Pink Grapefruit and Prawn Salad (5:2 and Weight Watchers)

Ingredients
- 90g fresh North Atlantic prawns, cooked and peeled (40 calories a portion)
- 1 large pink grapefruit, peeled and split into segments (26 calories a portion)
- 40g salad leaves (3 calories a portion)
- 2 tablespoons Hellmann's Low Fat Mayonnaise (15 calories a portion)
- Tabasco, to taste (0 calories)
- fresh mint leaves (6 calories a portion)
- salt and pepper
Note
A simple flavour packed salad which is only 90 calories per portion. This salad is perfect for anyone following the 5:2 diet as well as Weight Watchers.
Directions
Step 1 | Add 3 to 4 drops (or more) of Tabasco to the low-fat mayonnaise, mix well and season to taste with salt and pepper; spoon it into a small serving bowl. |
Step 2 | Arrange the salad leaves on a plate, and then add the prawns and grapefruit segments. Finely chop the mint leaves and scatter them over the top. |
Step 3 | Serve the prawn and grapefruit salad with the spicy mayonnaise for dipping. |

Nice and light dish! Salads are my favourite lunch, but I’ m addicted to ex olive oil and bread (no very good if you are counting calories…..)

A really lovely salad, Karen and I must say, I’ve never tried grapefruit with prawns, but on any diet I think the grapefruit power burns through extra calories so this would be brilliant! Thanks for the inspiration x
