My Family Recipe for Rustic Style Potato Salad
I am home after a long day but enjoyable day; I have been to Blog Camp in London, and it was just brilliant to meet all my food blogger friends, as well as learn new blogging tips and helpful information about social media support etc……….but more about that later, as I want to share a LOVELY organic recipe with you all tonight, a family favourite (and MUCH requested by friends and B and B guests), my recipe for Rustic Style Potato Salad. This potato salad was made a week or so ago, and was part of my Organic September & Seasonal Family Recipes – Chicken Pie, Strawberry French Toast & Soup with Cheese Toasties post, where I created several new recipes from a rather lovely box of organic ingredients I was sent by Sainsbury’s. It’s all part of Organic September, a month-long event, which is being run by the Soil Association, and is actively encouraging people to buy and use organic produce. This is my fourth and last recipe, that I managed to make from my box of organic goodies…….I also made and shared recipes for: French Toast Stacks with Strawberry Compote, Spiced Carrot Soup with Cheese and Houmous Toasties and Chicken, Sausage and Mushroom Pie.
So, where do the vintage plates come in to the post? Well, the lovely old plate, or should I say bowl, that my potato salad is being served in, is part of a collection of about half a dozen old vintage French plates I have by Sarreguemines, a pottery that specialises in every day dining ware. The plate may look sober and has a very simple design adorning the edge, but it has a creamy resonance that harks back to past times, and every time I take the plates or bowls out to use at our dining table, I always wonder who used them, or owned them, before me, and what they ate from them. I am sure that this rustic potato salad would have been very welcome, and I am sure that it would have been made with freshly dug potatoes, and maybe a bowl of thick, creamy home-made mayonnaise.
This potato salad is a winner of a recipe, especially when made with organic potatoes; I am ALWAYS asked what makes the flavour so “savoury” and tasty, it’s a very common but secret ingredient which just makes this potato salad just a little bit different. And, the secret ingredient……it’s liquid Maggi Seasoning, which is used in place of salt. It’s a seasoning that I picked up when I lived in West Germany, and this recipe is based on a recipe that a German friend of mine used to make. My version is vegetarian, but my friend used to add chopped ham or bacon to hers, which is a meaty option! Anyway, it’s a hearty and rustic style recipe and is perfect for picnics, packed lunches, supper, lunch, barbecues or just about any meal, as well as parties and buffet gatherings too. Rustic Style Potato Salad

Ingredients
- 900g potatoes, peeled (I used Sainsburys So Oragnic British Potatoes)
- 2 -3 tablespoons low-fat mayonnaise
- 2 -3 tablespoons low-fat creme fraiche
- 50g finely diced cornichons
- 6 finely chopped spring onions
- 1 -2 tablespoons liquid Maggi seasoning
- 2 hard-boiled eggs, diced (I used Sainsburys Free-Range eggs)
- freshly ground black pepper
Optional
- 1 red onion, peeled & finely diced
Note
Instead of the spring onions, use diced red onions. I have also added diced left over chicken & chopped apple to this mixture. I have given the option of using more or less mayonnaise mixture for personal taste; some people like it very creamy & others like it not so creamy. Maggi seasoning is quite salty, so use 1 tablespoon to start with, adding more if needed - teaspoon by teaspoon.
Directions
Step 1 | Peel the potatoes if needed & cut into small dice. Boil until just tender - not TOO soft! Drain the potatoes in a colander and set on one side too cool. Meanwhile, mix together the low fat mayonnaise, low fat creme fraiche and the Maggi seasoning. Add the black pepper to taste. |
Step 2 | Add the mayonnaise mixture to the potatoes and mix well but try not to break the potatoes up. Add the cornichons, boiled eggs and spring onions to the potato salad - mix through gently. |
Step 3 | Taste and add more Maggi seasoning or black pepper if required. |

Oh potato salad, such a great summer dish. I got my recipe from my Irish family, but since moving to the Netherlands I’ve discovered some fantastic German recipes for potato salad too.
If I can have another favourite, it would have to be Jannson’s Temptation, a Swedish potato gratin with anchovy. Perfect for those autumn evenings.
