Cheese, Tomato and Garden Herbs Omelette
Close friends (and family) and some of my readers will know that when I am in South West France, I run a Bed and Breakfast. It’s our home too of course, but was bought specifically to run a Chambres d’Hotes as well as a cookery school over twelve years ago now. I also offer evening meals for my guests, as well as picnic hampers, light lunches, snacks and of course breakfast. My breakfasts, I’d like to think based on past customers comments, are legendary! Included in the basic cost of bed and breakfast, I wanted to provide a wonderful start to the day for all our guests. Having our own chickens provides me with a steady supply of free-range eggs, and being an avid preserver, nearly ALL of the jars of jams and marmalades on the breakfast table are made by myself

Our large breakfasts comprise porridge, cereals, yoghurt, fresh fruit, toast, baguette, home-made bread rolls, cheese, croissants, pain au chocolat, fruit juice, tea, coffee, hot chocolate, AND eggs to order, of which today’s recipe for Bed & Breakfast Cheese, Tomato and Garden Herbs Omelette is a top favourite with all or guests. My omelettes are cooked to order and are made with my chicken’s free-range eggs. Light and fluffy, fragrant with freshly picked garden herbs, home-grown tomatoes (when in season) and mature Cheddar cheese, as well as a sprinkling of Grana Padano cheese, they are loved by all, both children and adults, as well as myself and my family. So, when I was deciding what to cook for Dom’s Simply Eggcellent challenge, this was the first recipe that came to mind!
Dom’s theme this month is Breakfast, and eggs maketh a breakfast in my humble opinion! The recipe for my Bed & Breakfast Cheese, Tomato and Garden Herbs Omelette is shared below, and if you can use any cheese you want, of course, as well as a different selection of herbs if you wish, but free-range eggs is a non-negotiable ingredient, as battery farming is a cruel and unnecessary type of factory farming that has no place in our so-called “civilised society”. Sorry to have a bit of a rant, but when you see how happy free-range chickens are, and how they run and catch insects, as well as indulge in dust baths and sunbathe, you would never condone keeping them cooped up in tiny cages inside ever again! Ingredients
- 2 free range eggs beaten with 2 tablespoons water
- salt and pepper to taste
- 1 teaspoon rapeseed oil or butter
- 25g grated mature Cheddar cheese
- 6 cherry tomatoes, halved
- freshly picked chives and parsley, finely choppped
- 1 teaspoon grated Grana Padano cheese
Note
This is my staple breakfast omelette recipe that I make for my Bed and Breakfast guests; made with my own hen's free-range eggs and with freshly picked garden herbs, it's always a hit and makes a wonderful start to the day when served with toast, fruit juice and tea or coffee.
Directions
Step 1 | Season the beaten egg and water with salt and pepper to taste. Mix the grated Cheddar cheese, cherry tomatoes and half of the herbs together. |
Step 2 | Heat the oil or butter in an omelette pan and pour the omelette mixture in, swirling them around the pan and constantly tipping the pan and drawing the edges into the middle, to allow to runny egg to run out and set. (Use a wooden fork or Teflon spatula) |
Step 3 | When the eggs are nearly set to your liking, spoon the Cheddar cheese, tomato and herb mixture over the top of the eggs, flip one half over and cook for a further 1 to 2 minutes until the omelette is set. |
Step 4 | Slide the omelette out of the pan on to a warm plate, sprinkle the grated Grana Padano cheese and remaining herbs over the top and serve immediately. |

(Village Location, Amongst Vineyards And Sunflowers, Close To Atlantic Beaches & Historic Towns)
Our lovely home is furnished throughout with period & antique French furniture, all which has been lovingly restored by us. Each bedroom has its own theme, style or era. There is a sunny breakfast & day room with TV, DVD & DVDs & Videos to watch, as well as a Wi-Fi. Games & books are also available. The Pierre Loti salon is for romantic evening dining & drinks – the room is adorned with beautiful tapestries, kilims, oriental carpets & antique paintings/prints. For the benefit of our winter guests we have a lovely antique wood burning fireplace. An exotic & fascinating room to dine or relax in after a heavy day at the beach or shopping. To the front of the house we have an enclosed terrace & front garden where our covered Well is situated…dine under the stars surrounded by honeysuckle, roses, aromatic herbs & lavender or just watch the world go around whilst sunning yourself besides our own grapevine. To the rear we have a lovely walled garden with fruit trees, flowers and herbs, here there are numerous sun beds and a new swimming pool.

We would BOTH love it if you and your husband visited Liz, it would be fab to meet you and chat about old Hong Kong etc over a meal in the garden and a few glasses of wine!
I DO get tired sometimes, and then just become a lounge lizard for a few days, and then the urge to “do things” takes over!
I cannot take all the credit for the B and B, as my husband helps and does the garden etc etc.

Karen, how I wish I could transport myself there now! And wake up to your scrummy breakfast in the morning. sigh But this post and your lovely photos make me feel a bit like I’ve actually been there. Your omelette looks perfect. You can’t go out for an omelette in the US without getting some massive thing that’s enough for three people.
