Who doesn’t love a little treat now and then, and today’s recipe for Chocolate Peanut Butter Muffins are just the kind of occasional treat that goes down well at Chez Lavender and Lovage! These chocolate muffins hide a delicious secret, a single Oreo Peanut Butter Flavour cookie is baked in the middle for a delectable surprise, as well as having another single cookie sitting on top of some fluffy peanut butter frosting, which is the perfect flavour combination for a slightly eccentric or shall we say, a nutty person like myself! The peanut butter flavoured Oreo is a tasty chocolatey sandwich biscuit (cookie) filled with a creamy peanut flavour centre, which marries so well with the rich, chocolatey muffin mixture, and at only 350 calories a serving they make a decadent but NOT too calorific treat for afternoon tea or the school and office lunch box.
Not only that, but these little chocolate and peanut butter buns, look fun and would brighten up any grey, winter’s day, especially when served with a cuppa! They are super easy to make, and even the children can get involved with making them, especially when it comes to adding the frosting and the Oreo cookie on top. The Oreo biscuit (cookie) range has some NEW exciting flavours, such as Choc’o Brownie flavour Oreo; Mint flavour Oreo, Strawberry Cheesecake flavour Oreo and the ones that I used, Peanut Butter flavour Oreo, with their nutty and creamy centres! My recipe for Chocolate Peanut Butter Muffins is shared below, on a printable recipe card, and as we approach Bonfire night and the festive season, I think these little cakes would be the perfect addition for any family tea time table, or for nocturnal snacking whilst watching the fireworks, along with a mug of hot chocolate too of course!

RECIPE
Chocolate Peanut Butter Muffins
with
New Peanut Butter flavour Oreo Cookies
(Makes 12 Muffins)
Ingredients:
Muffins:
100 g (4 oz) butter
200 g (7 oz) caster sugar
50 g (2 oz) cocoa powder
pinch of salt
175 g (6 oz) Self Raising Flour
2 free-range eggs
120 ml (8 tbsp) milk
12 Oreo Peanut Butter Flavour Oreos
Peanut Butter Buttercream & Decoration:
100 g (4oz) butter
225 g (8 oz) sieved icing sugar
3 heaped tablespoons crunchy peanut butter
3 tablespoons milk
12 Oreo Peanut Butter Flavour Oreos
Directions:
Heat oven to 180C/350F/Gas Mark 4. Grease a 12 hole muffin tray and line with paper or foil cases.
Muffins: Cream the butter and sugar until light and fluffy. Add cocoa powder, salt, flour, eggs and milk, and mix together until you have a slightly lumpy batter – do not overmix.
Divide half the mixture between the prepared cake/muffin cases, then place an Oreo Peanut Butter Flavour biscuit/cookie on top of the batter, then cover with the remaining batter on top and bake for 25 to 30 minutes until well risen and cooked. Allow to cool for a few minutes in the tin before taking out and leaving to go cold on a wire rack before decorating.
Peanut Butter Buttercream: Cream fat, gradually add icing sugar and peanut butter together, then add the milk to make a soft consistency.
Decorating: Divide the peanut butter buttercream on top of each muffin and then place an Oreo Peanut Butter Flavour biscuit/cookie on top.
Arrange on a cake stand and store excess muffins in an airtight container for up to 4 days.
