New Year’s Revolution Challenge
A New Year and a new diet! Yes, like most of the population post-Christmas I am back on a diet and am trying to watch what I eat. But, being a food writer, blogger and recipe developer I love food and I’m always cooking, creating and baking, and, I enjoy my food so I’m trying to eat healthier without making it boring or uninteresting. As regular readers will know I use my Tefal ActiFry a lot to achieve healthy meals as you can cook with less fat. And when Tefal ActiFry challenged me to come up with a new recipe for their New Year’s Revolution Challenge, I was keen to participate! Ingredients
- 1 Tefal ActiFry spoon vegetable oil
- 2 red onions (peeled and cut into thin wedges)
- 1 large red pepper (trimmed and diced)
- 2 cloves garlic (peeled and finely diced)
- 450g diced chicken breast
Marinade
- 150g 0% fat plain yogurt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chilli flakes or chilli powder
- 1/2 teaspoon ground ginger
To serve
- Fresh coriander leaves, raita, salad and naan breads (to serve)
Note
Healthy Indian Style Chicken Kebabs - Low in fat but full of flavour, these kebabs are cooked in an ActiFry Genius XL machine in half an hour.
Directions
Step 1 | Mix all the marinade ingredients together in a bowl and add the diced chicken breast, allow to marinate for at least 1 hour. |
Step 2 | Add the oil to the ActiFry and then the chopped onions, pepper and garlic. Set the machine to 10 minutes and press the cook button. |
Step 3 | After the 10 minutes has elapsed, add the diced chicken pieces with some of the yogurt marinade but not all of it. Use a slotted spoon for ease. Set the time for 15 minutes, and press the cook button. Check the chicken after 12 or 13 minutes, and if it is cooked then stop the machine. |
Step 4 | Remove the pan from the machine and scatter chopped coriander leaves over the chicken kebabs. Serve the kebabs on a bed of fresh salad with raita and mini naan breads. |

It looks delicous. As I am trying to keep weight on my husband (who is disabled) I would make this in a low oven or saute it. But we love Chicken Tikka, and this hit that spot!
