My recipe today for Healthy Cajun Chicken Salad is a slightly adapted recipe from WW UK, and is only 4 Smart points on the Blue plan.
Packed with spices, salad and vegetables, it’s vibrant flavours belies its low calorie count. The zingy lime juice, and salsa adds to the taste of this Healthy Cajun Chicken Salad.
Serve for a light lunch, or for a simple supper dish. If you want to serve this recipe to the whole family, then you can adjust the seasoning and omit the Jalapeno peppers for any young children.
If you cannot source Cajun seasoning, I have shared a recipe below in the Notes section. However, there are several leading spice companies in the UK that sell it.
Substitutions & Notes
- Use a firm white fish or salmon fillet in place of the chicken, or grilled halloumi for a vegetarian dish. (Adjust the points accordingly)
- Adjust the vegetables according to the season, such as using cucumber, courgettes, bell peppers, green beans and shredded cabbage in the salad.
- Use lemon juice if you cannot source any limes.
- Homemade Cajun Seasoning: (The Hairy Bikers)
Ingredients:
1 tbsp sea salt
1 tbsp sweet paprika
1 tbsp garlic powder
2 tsp ground white pepper
2 tsp onion powder
1 tsp ground cumin
1 tsp cayenne pepper
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried basil
(Makes 6 tablespoons of Cajun seasoning)
Method:
Pound the sea salt until fine, then mix with all the remaining ingredients. Alternatively, for a smoother powder, blitz in a spice grinder.

Ingredients
- Calorie controlled cooking spray
- 2 chicken breasts, skinless, flattened to a thickness of about 1cm
- 2 teaspoons Cajun seasoning
- Juice of 1 lime
- 40g Mexicana Cheddar with jalapeno peppers
- Salad leaves
- 1 small red onion, peeled and finely sliced
- 1 carrot, peeled and peeled into ribbons
- 10 cherry tomatoes, halved
- 1 small tin of sweetcorn, 198g, drained
- 2 teaspoons drained, sliced Jalapeno peppers
- 2 tablespoons salsa
- 1 tablespoon reduced fat sour cream
Instructions
1. Preheat the grill to medium. Mist a non-stick griddle pan with the cooking spray and set over a medium heat. Mist the chicken with spray, then coat in the Cajun seasoning. Griddle for 3-4 minutes each side, until cooked through.
2. Pour two-thirds of the lime juice onto the chicken, then top with the cheese. Put under the grill for 1 to 2 minutes, until the cheese has melted.
3. Meanwhile, toss the salad leaves, onion, carrot, tomatoes, sweetcorn and remaining lime juice in a large bowl.
4. Slice the grilled chicken, and arrange it on top of the salad. Scatter the sliced Jalapeno peppers over the chicken and salad.
5. Serve with the salsa and sour cream.
