Caramel Popcorn and Malteser Rocky Road – A delicious, easy to make “no-bake” chocolate treat with popcorn, Maltesers and mini marshmallows

I am taking a break from healthy Air Fryer recipes, to bring you a decadent no-cook bake for Caramel Popcorn and Malteser Rocky Road.
This recipe for Caramel Popcorn and Malteser Rocky Road is totally decadent, and we ALL love it here at Chez Lavender & Lovage.
Malted milk biscuits are broken up and added to buttery, melted chocolate, before mini marshmallows, maltesers, and caramel popcorn is added.
I also added a bag of Easter Munch Mix from Aldi last time I made these, which has caramel popcorn, pretzels, mini eggs, malt balls, and chocolate beans in it.
However, the basic ingredients make a fabulous Rocky Road when these aren’t in stock, as they are marketed for Easter, and not for all year round.
I discovered that Rocky Road is an American (and Australian) name and version for what we call Tiffin in the UK – basically a “no-bake” chocolate bar.
There are regional differences to both Rocky Road and Tiffin, as I have copied below:
- Australia
The main ingredients in traditional Australian rocky road are:
glace cherries or raspberries
milk chocolate (sometimes dark or white chocolate is used)
desiccated or shredded coconut
nuts, particularly peanuts
marshmallow
The most famous commercial brand of rocky road in Australia is the Darrell Lea “original recipe” version, sold as “Rocklea Road”. This version does not have cherries or raspberries, instead having bigger marshmallow chunks and more coconut. A raspberry version is also available. - United Kingdom
The main ingredients in traditional British Rocky Road are:
dried fruit
biscuit (usually digestives)
milk chocolate (sometimes dark or white chocolate is used)
a light dusting of icing sugar on the top (optional)
United States - American rocky road brownies
The main ingredients in traditional American rocky road are:
milk chocolate
marshmallow
walnuts or almonds. The most popular version of rocky road in the U.S. is in ice cream form, which consists of chocolate ice cream, marshmallows (or sometimes a “marshmallow swirl”), and nuts.
My recipe has biscuits, maltesers, caramel (toffee) popcorn and mini marshmallows, all mixed in with milk and dark chocolate, butter and golden syrup.
I have added a list of alternative ingredients you can add, but the basics in this recipe make a truly delicious no-bake chocolate treat, that I often make for our village hub.

- 1 x 200g packet of malted milk biscuits
- 1 x 189g bag Maltesers
- 1 x 150g bag mini marshmallows
- 100g caramel (toffee) popcorn
- 300g milk chocolate, broken up into squares
- 100g dark chocolate, broken up into squares
- 120g butter, cut into pieces
- 3 x tablespoons golden syrup
- Topping:
- 100g milk chocolate broken up into squares
- Handful of mini marshmallows
- Handful of caramel (toffee) popcorn

Ingredients
- 1 x 200g packet of malted milk biscuits
- 1 x 189g bag Maltesers

- 120g butter, cut into pieces

Instructions
- Line an 8" (20cms) square baking tin or tray with greaseproof paper.
- Out the biscuits into a large plastic bowl, and bash them up into small pieces with the end of a rolling pin or a kitchen mallet.
- Add the Maltesers, mini marshmallows and popcorn and mix together well.
- Put the chocolate, butter and golden syrup into a saucepan and heat togther over a low heat until the chocolate and buuter have melted.
- Pour or spoon the melted chocolate mixture into the bowl with the biscuits, Maltesers, mini marshamallows and popcorn.
- Mix together and stir thoroughly until everything is coated in the chocolate mixture.
- Tip the mixture into the prepared tin and press the mixture down firmly and evenly until the surface is smooth .
- Using the same saucepan, add the chocolate for the topping and melt it over a low heat.
- Pour or spoon it over the Rocky Road and scatter more mini marshmallows and popcorn over the top before it sets, pushing them into the warm chocolate coating.
- Place the Rocky Road in the fridge or in a cold place to allow it to set, which will take between 2 and 3 hours.
- When it has set, using a sharp knife, cut it into squares.
